More consistent use of platform macros
cmake/target.cmake defines macros for the supported platforms, this
commit changes predefined system macros to our own macros.

__linux__ --> OS_LINUX
__APPLE__ --> OS_DARWIN
__FreeBSD__ --> OS_FREEBSD
